1 1/2 oz rum
Half a lime, juiced
1 oz pineapple sage simple syrup
Club soda to top
Pineapple sage leaves for garnish and muddling
Muddle limes, leaves and simple syrup in a highball glass. Add rum and plenty of crushed ice. Top with club soda. Garnish with extra leaves if desired.
Recipe for pineapple sage simple syrup :
Combine 1/2 cup sugar and 1/2 cup boiling water. Steep 10-12 pineapple sage leaves 15 to 20 minutes and remove. Store in refrigerator.
