- 2 Fresh jalapeño peppers, cored, seeded and minced
- 1.5 c. grated Monterey Jack cheese
- 1.5 c. grated sharp Cheddar cheese
- 2 T. minced cilantro
Combine the jalapeños in a mixing bowl and blend well. Shape the mixture into rounded teaspoon-size balls, about 3/4 inch in diameter, and roll them in cilantro. Chill, loosely covered, 2-3 hours before serving. Serves 12-14
