- 1 lb. lean ground beef
- 1 (26 oz.) jar spaghetti sauce
- 1 1/2 c. water
- 16 oz. low fat cottage cheese
- 2 c. mozzarella cheese, shredded
- 1/2 c. Parmesan cheese, grated
- 2 eggs
- 1/4 c. parsley
- 1/2 tsp. salt
- 9 pieces lasagne noodles, uncooked
Directions: Put parsley in Cuisinart and chop. Add cottage cheese, Parmesan cheese, 1/2 mozzarella cheese, eggs and salt. Process together. Set aside. Cook ground meat in large skillet until done. Drain. Add spaghetti sauce and water. Simmer for 10 minutes. Put 1 cup sauce in a 9 x 12-inch Pyrex dish. Top with 3 noodles. Add another cup sauce and half the cheese mixture. Top with 3 more noodles. Repeat sauce and remaining cheese mixture. Top with the last 3 more noodles, then the remaining sauce. Put the other half of the mozzarella on top. Cover and bake for 40 minutes. Servings: 12.
